Instructions
In a medium-large bowl, mash a very ripe banana (I just use a fork). It should be about 1/2 cup of mashed banana.
Add the soy milk, brown sugar, vanilla and canola oil, and whisk together well.
Add the flour, baking powder, salt, cinnamon and nutmeg. Mix together well.
Once everything else is well-combined, add in the vital wheat gluten and mix. Vital wheat gluten is added at the end to avoid over-mixing.
Heat a large pan or griddle on medium heat. Spray the pan with a bit of oil to avoid sticking.
Add about 1/6 of the batter to the hot pan/griddle. Cook until you start forming bubbles (~1-2 minutes).
Flip the pancake and cook the other side (another 1-2 minutes). You'll know it's done cooking when it's golden brown on both sides.
Repeat until all the batter is used. You should end up with about 6 medium-sized pancakes.
