This High Protein Vegan Quesadilla is the perfect quick meal or snack when you're running low on time!

Ingredients

  • 2 Tortillas I use Mission Plant Protein tortillas
  • 1.5 servings Vegan Shredded Cheese I use Violife Mexican Blend
  • 2 tbsp Nutritional Yeast

Instructions
 

  • In a medium-heat pan, lay down one of your tortillas. Evenly spread the shredded cheese and the nutritional yeast.
  • Add the other tortilla on top. Allow to cook 2 - 3 minutes until bottom tortilla is slightly browned and cheese is starting to melt, then flip.
  • Cook for another 2 - 3 minutes and serve.
