Add in the marshmallows and stir. You want to cover all the marshmallows with the melted butter. They should create a big, melted blob.
Add in edamame puffs and stir really well until fully coated.
Dump the mixture into an 9" x 9" square dish and smooth them out.
While they cool - in a small microwave-safe bowl, microwave the white chocolate chips and coconut oil for 30 seconds. Remove and stir. Microwave in 20 second increments (to avoid melting), stirring really well in between, until fully melted.
Stir in the salt and strawberry powder.
Add the melted chocolate on top of the crispy treats.
Optionally, you can add the sprinkles at this point.
Throw them in the fridge/freezer for 10-15 minutes, or until the chocolate topping hardens and then remove them.
Allow them to get back to room temperature and enjoy!
