  • In a pot, melt butter on low heat.
  • Add in the marshmallows and stir. You want to cover all the marshmallows with the melted butter. They should create a big, melted blob.
  • Add in edamame puffs and stir really well until fully coated.
  • Dump the mixture into an 9" x 9" square dish and smooth them out.
  • While they cool – in a small microwave-safe bowl, microwave the white chocolate chips and coconut oil for 30 seconds. Remove and stir. Microwave in 20 second increments (to avoid melting), stirring really well in between, until fully melted.
  • Stir in the salt and strawberry powder.
  • Add the melted chocolate on top of the crispy treats.
  • Optionally, you can add the sprinkles at this point.
  • Throw them in the fridge/freezer for 10-15 minutes, or until the chocolate topping hardens and then remove them.
  • Allow them to get back to room temperature and enjoy!

Soy-free Option

Guys, if you havenโ€™t used edamame puffs (also known as soy crispies in some places), let me put you on this awesome way to add protein to your diet! So, basically, they have a pretty similar texture to puffed rice, but they are very high in protein – about 80% protein (on a calorie basis). They are definitely crunchier than puffed rice, but I use them the same way you would puffed rice. Theyโ€™re great for high protein โ€œriceโ€ crispy treats, chocolate crunch bars and various other snacks.

These high protein โ€œriceโ€ crispy treats are a great alternative to protein bars. You can make a batch of 9 at home in under 10 minutes. The macros are pretty similar (and typically better) than what youโ€™ll see with most store-bought protein bar options, and cost-wise, youโ€™ll save some money!

Things You’ll Need

  • Edamame Puffs – these are also called soy crispies or soy puffs, depending on your location. Most of them are just made with edamame (soy) protein isolate and rice starch, and they have a similar (though crunchier) texture to puffed rice. I have not been able to find them at any of my grocery stores, but I can usually find them online. I buy the brand SmartforLife and they come in a 3 lb bag which means they’ll last you awhile!
  • Vegan Marshmallows – I prefer the brand Dandies for my vegan marshmallows.
  • Vegan Butter – any vegan butter will work!
  • Strawberry Powder – I use the freeze-dried Strawberry powder from the brand Anthony’s. It adds a nice natural strawberry flavor, but is dry so it doesn’t add any liquid and ruin the crunchy texture.

  • Vegan Mini White Chocolate – I buy the brand Enjoy Life.
  • Coconut Oil – helps keep the chocolate from burning when melting it and also adds some shininess.
  • Salt – balances the flavor.
  • Sprinkles – adds whimsy and happiness!

How to Make it

  • In a pot, melt the butter on low heat. It doesn’t take very long so keep an eye on it so you don’t burn the butter.
  • Add in the mini vegan marshmallows with melted butter. Coat all the marshmallows with the melted butter and continue mixing until they start to melt. I use a spatula for this and basically smoosh the marshmallows on the bottom of the pot and stir. You should end up with a large melted blob.
  • Add in the edamame puffs and mix together really well until all of the edamame puffs are coated in marshmallow goo.
  • Dump the mixture into 9″x9″ square dish and smooth them out.
  • While they cool – in a small microwave-safe bowl, microwave the white chocolate chips and coconut oil for 30 seconds. Pull out of the microwave and stir really well. Continue microwaving in 20 second intervals, stirring well in between. It generally doesn’t take more than 60 – 90 seconds. Shorter increments keep the chocolate from burning. The chocolate should be fully melted, smooth and shiny.
  • Stir in the salt and strawberry powder.
  • Add the melted chocolate on top of the crispy treats.
  • If you’re going to add sprinkles on top, the time is now!
  • Toss them in the fridge or freeze for 10 – 15 minutes or until the chocolate topping fully hardens and then you can remove them.
  • Let them get back to room temperature and enjoy!
  • They’re also really good if warmed up in the microwave for like 15-20 seconds.
