Ingredients

  • 1 block Extra Firm Silken Tofu (Mori-Nu 12.3oz package)
  • 1 1/2 cup Soy Milk
  • 1 Dragon Fruit Smoothie Pack I used Pitaya
  • 1 cup frozen blueberries
  • 2 servings Vegan Vanilla Protein Powder

Instructions
 

  • Blend everything together until smooth and creamy

Notes

Soy-free Option:
  • Use a different non-dairy milk instead of Soy Milk.
  • Omit the silken tofu from the recipe – if you’re wanting the macros to be the same, just add an extra scoop of protein powder to make up for this.

Smoothies, in my opinion, are the perfect way to get a crap ton of fruits and veggies in for the day first thing in the morning! Like even if my day goes horribly off-track, at least I ate a couple big handfuls of spinach this morning. I really like the flavor combo of Blueberry and Dragonfruit, but more importantly, it’s such a pretty color! It reminds me of the Grimace Shake that was trending awhile ago, but also of the Pokemon Grimer. This is definitely what Grimer eats every day to get that amazing purple color! Maybe the most surprising thing about this smoothie is that we use silken tofu. I like using silken tofu in all my high protein smoothies because it makes them really creamy and adds some extra protein!

Ingredients

  • Extra Firm Silken Tofu – you can use any kind of silken tofu for this smoothie, but I really like the Mori-Nu Extra Firm Silken Tofu. It’ shelf stable and the macros are really good! You can usually find this specific silken tofu in the International Cuisine Aisle at the grocery store. If for some reason your store doesn’t have this, you could buy it online or you could just use the refrigerated type of silken tofu that’s usually over by the other tofu types.
  • Soy Milk – you can use a different type of non-dairy milk if you either don’t like soy milk or don’t have any, but soy milk is my favorite non-dairy milk because it’s very creamy and it also has a good amount of protein on a calorie basis.
  • Dragon Fruit – I found little Dragon Fruit Smoothie Packs at the store from the brand Pitaya. To be completely honest, I bought them because they were so pretty and pink! If you don’t have dragon fruit, you could always sub this out with a different fruit you like!
  • Blueberries – I used frozen blueberries, but you could also use fresh. And of course, you could sub these out with another fruit you like better.
  • Vegan Vanilla Protein Powder – Earth Chimp has been my go-to protein powder for smoothies because the flavor is pretty mild, but any protein powder would work well!

Instructions

  • The literal best part of making a smoothie is that you just have to throw everything in your blender and blend it. So easy!
  • I like to put the milk in first so that there’s a lesser potential for spatula intervention to be needed.
