Notes
- Omit silken tofu – if you want the same macros, add an extra scoop of protein powder.
- Use a different non-dairy milk instead of Soy Milk; I would recommend Oat Milk or Cashew Milk, since they are a little more creamy!
Have you made a smoothie with dragonfruit yet? It is one of my favorite fruits to use, because it has the most beautiful color! There are actually two kinds of dragonfruit – one of them has a pretty pink color on the inside and the other is a really beautiful white! They both taste great – similar to a pear! For this High Protein Coconut Dragonfruit Smoothie I used the pink dragonfruit!
I love using silken tofu in almost all of my smoothies, because it adds a thick creaminess. Silken tofu is also high in protein! If you’re looking for more dragonfruit recipes, check out this High Protein Blueberry Dragonfruit Smoothie.
Ingredients
- Extra Firm Silken Tofu – I like the brand Mori-Nu, since they are shelf-stable! I usually get the extra firm silken tofu, since it’s a little higher in protein. Any silken tofu will work great though, just make sure you are using silken tofu and not regular tofu. Using regular tofu will result in a texture that will make you very sad, and possibly mad at me, so only use silken! 🙂
- Soy Milk – this is my favorite plant-based milk option, because it’s high in protein and creamy. If you have another favorite, feel free to use that instead!
- Dragon Fruit Smoothie Pack – I used Pitaya. You can also use frozen dragonfruit cubes, or fresh (if you can find it at your local grocery store).
- Coconut Fruit Smoothie Pack – I used Pitaya. It’s frozen, and can be found near the frozen fruits at the grocery store.
- Vegan Vanilla Protein Powder – make sure you pick a protein powder you love. A crappy protein powder can ruin an otherwise good smoothie. I really like Orgain Vanilla personally; it’s creamy, has a good flavor and doesn’t have a gritty texture.
Instructions
- Basically you just throw everything in a blender and blend until smooth and creamy. This High Protein Coconut Dragonfruit Smoothie is pretty thick so it may require some spatula intervention.
