High Protein (Vegan) Carne Asada & Egg Tacos

We found these Eat Meati Carne Asada steaks at Whole Foods the other day; they have incredible macros and are made from mushroom root! They were very quick and easy to cook, and had great flavor! Paired with some Just Eggs and cashew queso, they were a perfect high protein quick meal! You could also top with a salsa or something if you don’t feel like making this queso.

Ingredients

Taco

  • 1 box Eat Meati Carne Asada Steaks
  • 1/2 cup Just Egg liquid
  • 4 Mission Plant Protein Tortillas these have really good macros so this is what we use; you can sub these with another tortilla but the calories and macros will likely be different
  • Vegan Queso

Instructions
 

  • Make the vegan queso per the recipe linked in the ingredients section
  • Cook Carne Asada steaks per package instructions. Set aside once cooked and slice for the tacos
  • In a medium-low heat pan, add your Just Egg liquid and cook. I like to continuously move the Just Egg around while it cooks so that it becomes a scrambled egg like texture
  • Assembly: Place half of a steak (sliced) in each tortilla, and 1/4 of the eggs (on each tortilla). Top with queso, salsa or whatever you like

This is one of my few recipes that is very packaged food focused, so if you would like something healthier and less processed, I’ve got some other high protein breakfast options – tofu scramble, smoothies, etc. If you’re down for this processed high protein breakfast, let’s go!

Ingredients

  • Eat Meati Carne Asada Steaks – theses are a bit of a specialty food item, and I’ve only been able to find them at a couple stores. They use mushrooms for this product, and it’s disturbingly realistic. My partner enjoyed it a lot more than I did, because I get anxious when I eat foods that have a texture too similar to meat.
  • Just Egg liquid – I used the Just Egg liquid for this, but you could also use the patties if that’s easier!
  • Mission Plant Protein Tortillas – these have really good macros so this is what we use; you can sub these with another tortilla but the calories and macros will likely be different.
  • Vegan Queso – the recipe is linked above in the recipe card. This one uses cashews and soy milk.

Directions

  • Follow the recipe above the make the vegan queso.
