Shredded BBQ Tofu Nachos

These Shredded BBQ Tofu Nachos will satisfy every vegan junk food craving! Most of my recipes are higher in protein, but when I'm really having junk food cravings, this is the meal I make!

Ingredients

  • 8 oz Super/Extra Firm Tofu ~1/2 block
  • 4 tbsp BBQ Sauce
  • 2 servings Tortilla Chips
  • 1 serving Cashew Queso
  • 1/2 cup Vegan Shredded Cheese

Instructions
 

  • Make the vegan cashew queso linked in the ingredients section.
  • If you are using Extra Firm Tofu, be sure to press your tofu for at least 20 minutes (or overnight if you remember to). If you're using super firm tofu, you can skip this step.
  • Take a vegetable grater and shred about half of a block of the tofu.
  • In a medium heat skillet, cook the tofu in BBQ sauce, filliping regularly to prevent sticking. The tofu should be browned. This usually takes 15 – 20 minutes.
  • Once the tofu is cooked, make your nachos! I like to do tortilla chips, vegan cashew queso and shredded cheese. I will typically microwave it for 30 – 60 seconds just to melt the shredded cheese a bit. You can also throw the tortilla chips in the oven with the shredded bbq tofu and shredded cheese until it melts (broil would work best).

I know this is different than most of my recipes where the focus is protein, but a girl has junk food cravings from time to time, so I thought I would share my go-to junk food cravings crusher! Literally this is the thing I make most often when I’m having cravings, because I don’t live that close to restaurants with crave-able vegan options and this literally takes like 20 minutes to make.

If you’re wanting some higher protein options that still fall under the junk food craving crusher category, you should definitely check out my high protein loaded bacon ranch fries! I also have a couple high protein pizza crust options that will definitely help you will pizza cravings – be sure to top it with my stretchy soy mozzarella that has a surprising amount of protein because it’s made with silken tofu!

Ingredients

  • Super/Extra Firm Tofu – you can use either super firm or extra firm for this. With Super Firm, you won’t need to press the tofu, but with extra firm, I’d recommend pressing it for at least 20 minutes before using it. This helps get all of the extra water out which will give it a nicer, firmer texture when we cook it! If you’re soy-free, you can definitely still make this recipe, just swap the tofu with a soy-free tofu option, like fava bean!
  • BBQ Sauce – I know that everyone has their own BBQ Sauce preferences so use your favorite!
  • Tortilla Chips – if you do actually want a higher protein recipe, this is the ingredient we can tweak to get you there. I used regular tortilla chips in the picture and the calories/macros, but I’ve also made this with high protein tortilla chips that I make myself. You can just cut up those carb control / plant protein tortillas and toss them in the air fryer or the oven on a crisping tray! You could also use Endurance protein chips which I’ve also done before!
  • Cashew Queso – I use this on everything – I love it so much. If you’re making this soy-free, be sure to swap out the soy milk with a different plant-based milk!
  • Vegan Shredded Cheese – I love Violife Mexican Blend but you can use your favorite!

Instructions

  • Make the Cashew Queso recipe.
  • If you’re using Extra Firm Tofu, be sure to press it ahead of time. 20 minutes should be enough. If you’re using Super Firm, you can skip this step.
  • Shred the tofu using a vegetable grater. If you haven’t tried this before, I highly recommended it! Shredded tofu is able to really grab onto flavors because there’s so much surface area. You can also get the texture much more dense and meaty because it’s not able to hold onto water the same way.

  • In a medium-heat skillet, cook the shredded tofu. I kind of like to brown the tofu for 10 – 15 minutes or so before adding the BBQ sauce because it allows even more water to cook off.
  • Once the tofu is browned, add the BBQ sauce and cook for another 5 minutes or so.
  • Now, make your nachos! I like to top the tortilla chips with the shredded bbq tofu, cashew queso and shredded cheese and pop it in the microwave for 30 – 60 seconds to melt the vegan cheese. You can also throw it in the oven on broil for a couple minutes to melt the cheese (or you can not melt the cheese).
