PDV Chocolate Protein Pudding
Did you make this recipe?Mention @proteindeficient.vegan
Have you ever seen protein pudding at the health food stores like GNC or Vitamin Shoppe? This is like that but way less expensive, better tasting and vegan!
You can eat it on it’s own, use it to make a fun dirt pudding, use it in a pudding pie (which I highly recommend), or just add some toppings to it! It’s a pretty mild flavor and not super sweet so go crazy!
Ingredients
- Extra Firm Silken Tofu – here is where I will beg you to make sure you are using silken tofu. Silken tofu has a completely different texture than regular (firm/extra firm) tofu and blends entirely different. If you use regular tofu, you will definitely end up with some weird chocolate hummus situation, which could maybe taste pretty good now that I’m thinking about it, but would not be chocolate pudding. You can buy silken tofu at most grocery stores – usually near the other tofu options. There is also a shelf stable variety that hides out at most International Food Isles; you can also buy this type online! I like the brand Mori-Nu personally, and stick with their Extra Firm Silken Tofu.
- Cocoa Powder – needed for chocolatey goodness. ALSO, did you know that cocoa powder is like 40% protein on a calorie basis?
- Sugar, Brown Sugar – you could use a sugar alternative here if you’re trying to cut back. If you make a reduced sugar option, please comment what you did and how it turned out so others can learn from your kitchen experiments!
- Vanilla extract – I use this in everything; I may have a problem tbh.
- Salt – adjust to taste
Directions
- Add all of the ingredients to your high-powered blender. Blend everything together until well-mixed and creamy. We have pretty much no liquid in this, so you will likely need a spatula intervention or two to get this completely blended.
- Allow to chill for about an hour in the fridge.
