This vegan vanilla pudding recipe has 41% protein and is so tasty! It takes less than 5 minutes to make and is great for a pre or post workout snack! You can also use it in desserts like our Pudding Pie!

Ingredients

  • 1 block Extra Firm Silken Tofu (Mori-Nu 12.3oz package)
  • 1 serving Vegan Vanilla Protein Powder (I used Orgain)
  • 2 tbsp soy milk
  • 2 tbsp sugar
  • 1 tbsp vanilla extract

Instructions
 

  • In a high powered blender, mix all of the ingredients together until silky smooth
  • Allow to chill for about an hour and enjoy!

Have you ever seen that protein pudding that they sell at places like Vitamin Shoppe or GNC? This is like that, except we can make it way cheaper, and in my opinion, it tastes a lot better too. (Plus, it’s vegan and those usually aren’t).

This is a super quick recipe – it only takes like five minutes! You can eat the vanilla pudding plain, or use it for a pudding pie (you should check out my pudding pie recipe; it’s one of my favorites!), or you could use it for a parfait or something. It’s a pretty mild flavor so it will work with most toppings!

Ingredients

  • Extra Firm Silken Tofu – make sure you’re using silken tofu. The texture is much different than normal tofu (firm/extra firm) and it blends differently. If you use regular tofu, you will end up with vanilla flavored ricotta paste so I really don’t recommend that. You can find silken tofu at most grocery stores – there’s a refrigerated variety that hangs out with the other tofus, and a shelf-stable one that is typically near the International Food Isle. You can also find it at Asian Markets or just buy it online. I like the brand Mori-Nu because it’s shelf stable and usually use the extra firm silken tofu.
  • Vegan Vanilla Protein Powder – I used Orgain for this, but whichever protein powder you pick, make sure you like the flavor and texture, because this is where most of the flavor is coming from. Also try to pick something you don’t find gritty or your pudding may end up gritty as well.
  • Soy Milk – I used soy milk because that’s my favorite vegan milk, but you can use any milk you want here!
  • Sugar – we’re not using a ton of sugar in this recipe, but I think you need a little because this is still tofu.
  • Vanilla extract – not a must have, but I like the extra vanilla flavor.

Directions

  • In a high powered blender, mix all of the ingredients together until silky smooth. This may require some spatula intervention because this pudding is thiiiccckkk and we’re not using much liquid in the mixture.
  • Allow to chill for about an hour!
