  • Melt butter in a pot.
  • Add mini marshmallows, stir continuously until they melt and form a big goo collection.
  • Add in the edamame puffs and stir well .
  • Dump mixture in dish and spread out evenly.
  • Allow to cool for at least 15 minutes.

Soy-free Option

  • Use pea protein crisps (affiliate link) instead of edamame protein puffs – you can buy these on Amazon.

These High Protein “Rice” Crispy Treats are literally the PERFECT protein snack! They taste just like rice crispy treats, but are packed with protein! They have about the same amount of protein as most of the protein bars you’ll find, but you can make this at home with three ingredients in under 5 minutes (and, honestly, they taste better than any protein bars I’ve tried). High Protein “Rice” Krispy Treats might be my favorite high protein treat of all time!

Ingredients

  • Edamame Protein Puffs – this is one of my favorite high protein ingredients ever! I haven’t been able to find it in stores yet, but you can buy it online. I buy the SmartforLife 3 pound bag on Amazon, and I’m now on my fourth bag because these High Protein Rice Krispy Treats are seriously addictive!
  • Marshmallows – I always use the Dandies brand of vegan marshmallows; they are awesome! For this recipe, I like to use mini marshmallows because they melt quicker!
  • Vegan Butter – my go-to brand is Miyoko’s but any vegan butter will work just great!

Instructions

  • First, get a decently large pot and melt some butter in it. I like to keep the heat pretty low when making this.
  • Once the butter is melted, add in the marshmallows. I recommend stirring continuously to avoid burning and/or sticking. They will start to melt and form a large goo collection.

  • Once you have one massive marshmallow goo pit, add in the edamame puffs and stir well.
  • Dump the High Protein Rice Krispy mixture into a 9 inch x 9 inch dish. I use a glass dish and never need to spray it with oil or anything to keep them from sticking. But if you’re concerned about sticking, spray some oil on the bottom and sides of your pan or line with parchment paper; better safe than sorry!
  • Allow to cool for at least 15 minute, then cut into 9 even(ish) pieces and enjoy! 🙂

    LOVE these high protein “rice” crispies!
    The edamame puffs are harder than rice, but not too hard and have a crisp crunch. I liked the ratio of marshmallows to puffs and that they’re a dessert that helps me reach my protein goals!

      OMG! They are always out of stock! The only place I know to get them is directly from their website – SmartForLife, and on Amazon. They are usually only out of stock for a week or so at a time but it’s so annoying. I keep trying to convince the brand Say Grace to get in the edamame puff game since they make very similar products, but so far, no luck! I hope they’re back in stock for you soon!

    I finally made these and they are so good! It was way easier than I thought to make them too. I’m figuring out how long they’ll last (day 3 today – getting a little harder to chew) but it’s such a helpful recipe – thank you!

    1. I’m glad they turned out well! 🙂 We’ve only made it to day 3 like once and they do get pretty hard on the gums at that point lol. I think wrapping them individually in Saran wrap would help them stay fresh for longer!

    I have a sweet tooth but still need to hit my protein goals. These hit the spot and are so easy to make. They are now on a weekly rotation at my house.

    1. I’m always hesitant to add protein powder to these because it will make the marshmallows set a lot harder and could end up too sweet (depending on what kind of protein powder you’re using). I think if you’re going to do it, I would add a small amount to start with and see how they set up. I’ve added peanut powder and some other powders to the melted marshmallows before and anything more than a couple of tablespoons has resulted in them being harder when they set up. I’m not sure if it’s a vegan marshmallow thing but I feel like they’re not as soft and gooey when they set up as normal marshmallows. You can kind of combat the hardening with extra butter, but that might offset the benefits of the protein powder.
