These are way better than store bought and so easy to make! They also pack in some protein!

Ingredients

  • 1 1/2 tsp coconut oil melted
  • 1/2 cup vegan mini chocolate chips (I used Enjoy Life)
  • 3/4 cup PBFit Peanut Butter Powder powder
  • 1/4 cup powdered sugar
  • 1/2 cup water
  • 1/2 tbsp vanilla extract

Instructions
 

  • In a small glass bowl, melt the coconut oil in the microwave. Should take like 20 seconds
  • Add in the mini chocolate chips; stir well, and coat in the melted coconut oil. These should also start melting. Put in the microwave for 20 seconds. Take out the bowl and stir. Microwave for another 20 seconds, take out and stir. Do this in 20 second increments (to not burn the chocolate) until everything is melted and shiny
  • Coat the bottom and sides of the cup molds with the melted chocolate. Try to get it as even as possible without making it too thick. Put in freezer for 5-10 minutes
  • In a medium bowl, mix together the PBFit powder, powdered sugar, water and vanilla extract until well mixed
  • Once the chocolate is hardened, evenly distribute the peanut butter mixture across the cups
  • Spread remaining melted chocolate on top. And put in freezer for another 5 – 10 minutes

Not sure if you’ve tried the new plant-based Reese’s Cups yet. I think they’re good but still a little off from the original. They’re also kind of hard to find in most stores still. It’s actually pretty easy to make your own Peanut Butter Cups at home, and if you follow this recipe, you’ll end up with Protein Peanut Butter Cups, which will result in you convincing yourself it’s OK to eat more than you normally would 🙂

Ingredients

  • Coconut Oil – coconut oil works really in melted chocolate to give it that shiny I-know-how-to-properly-temper-chocolate look and feel without actually have to use a thermometer. If you are superior to me, feel free to temper your chocolate – I am lazy and will be adding coconut oil instead.
  • Vegan Chocolate Chips – I really like Enjoy Life Mini Chocolate Chips, mostly because they always have them at my grocery store and they taste good, but you can use whatever chocolate you like!
  • PBFit Peanut Butter Powder – this ingredient is key if you want these to be higher in protein. There are other brands like PB2 that also have peanut butter powder, but I’ve been using PBFit lately because the macros are a little better. You can usually find at least one of these brands at most stores.
  • Powdered Sugar – a must, in my opinion, but if you don’t mind if it’s not very sweet and are trying to cut down on sugar, I guess you could omit it.
  • Vanilla Extract – I just put vanilla in everything sweet tbh.

Instructions

  • In a small glass bowl (or microwavable dish), melt the coconut oil in the microwave. This should take about 20 seconds.
  • Once melted, add in the vegan chocolate chips and stir. We’re trying to coat the chocolate in the coconut oil so that it doesn’t burn in the microwave. Put back in the microwave for 20 seconds. Take it out and stir again. Do this in 20 second increments (these seems very short but you really don’t want to burn your chocolate and have to throw it away). Once everything is melted, smooth and shiny, you’re good to go!
  • Coat the bottom and sides of the cup molds with the melted chocolate. Try to get this as even as possible and not too thick. Put in the freezer for 5 – 10 mins until the chocolate has hardened. It will eventually harden at room temperature, but if you do it this way and work quickly, you shouldn’t need to mess with microwaving your chocolate again.
  • While you’re waiting on things to harden (giggity), start of your peanut butter filling. In a medium bowl, mix the PBFit powder, powdered sugar, water and vanilla extract together until well mixed and smooth.
  • Once the chocolate has hardened, evenly distribute your peanut butter mixture across the cups.
  • Hopefully once you get to this step, your chocolate is still melted. If not, heat it up again.
  • Spread the remaining melted chocolate on top.
  • Put these bad boys in the freezer for another 5 – 10 minutes and then you can eat them!
