This Instant Vegan Chocolate Hard Shell is way cheaper than the store-bought kind and only takes about 2 minutes to make! Is there anything better than chocolate hard shell on ice cream?

Ingredients

  • 1/3 cup mini vegan chocolate chips
  • 2 tsp Coconut Oil

Instructions
 

  • In a small glass (or microwavable) bowl, add the chocolate chips and coconut oil
  • Microwave for 30 seconds.
  • Remove from microwave and stir
  • Microwave for another 15 seconds
  • Remove from microwave and stir until everything is melted and smooth
  • Pour over ice cream and watch it harden in under a minute!

I’m not sure what I like more – ice cream or chocolate hard shell on ice cream. Ever since I realized you could just make instant chocolate hard shell, I want ice cream way more, so maybe I just like the combination! Either way, it can be hard to find vegan chocolate hard shell in stores, and even if you can find it in stores, you probably already have these two ingredients in your house from all the other awesome things you make! Plus this takes literally less than 2 minutes to make. You can also use this on cold fruits, or really anything cold.

Ingredients

  • Vegan Chocolate – I really love using Enjoy Life mini chocolate chips. Mostly because I already have them hanging out in my cabinets from other stuff I make. There are some other really great vegan chocolate options out there though – maybe my most favorite of all time is Chomp Chocolate! You have to order it online and it’s kind of pricey but it is really good vegan milk chocolate. There are plenty of other good vegan chocolates you can find at the store now too, like Lindt Oat milk Chocolate Bars, which oddly seem to mostly be at Walgreens and CVS?
  • Coconut Oil – I don’t have a brand preference with this. Whatever room temperature solid coconut oil you have laying around will do the trick!

Instructions

  • You’re going to measure out your chocolate and coconut oil into a glass (or microwavable) bowl. Microwave for 30 seconds. Pull out of the microwave and stir for awhile.
  • If it still has chunks and isn’t all the way melted, put it back in the microwave for another 20 seconds. Pull out of the microwave and stir again. It usually should be fully melted at this point, but if it isn’t, throw it back in the microwave for another 10 – 20 second intervals, stirring in between, until it is fully melted. Key a really close eye on this and don’t over microwave it or it will be disgusting.
  • Get out your ice cream or other cold foods, and slather that chocolate sauce all over it.
  • It should harden within 30 seconds or so (that’s what she said)
