Ingredients
- 16 oz Liquid Just Egg
- 10 Baby Red Potatoes
- 1/2 Green Bell Pepper diced
- 1/2 Red Bell Pepper diced
- 1/4 cup Sweet Onion diced (~1/4 onion)
- 1/2 cup Vegan Shredded Cheese
- Salt adjust to taste
Instructions
- Pre-heat the oven to 350 F (177 C).
- Lightly spray the muffin tin with oil to prevent sticking.
- Clean and chop your veggies. I go with very small dices for all of them.
- Poke a few holes into your baby potatoes and place one in each muffin cup (we're only making 10 so two muffin cups will remain empty).
- Cook for 35-40 minutes. You'll know they're done when they're soft enough to smoosh.
- Remove from the oven, and smash the potatoes, either with a fork or the end of a rolling pin. You want the smashed potato to cover the bottom of the muffin things.
- Distribute the liquid Just Egg across the 10 potatoes, try to even it out as best you can.
- Add the diced onion and peppers to the Just Egg.
- Sprinkle the vegan cheese on top.
- Cook for 18-23 minutes.

Notes
Higher Protein Option
If you want to make this recipe a little higher protein, I would recommend adding in some small pieces of seitan, vegan lunch meat, or my High Protein TVP Bacon Bits!
These Vegan Veggie Egg Bites are a pretty filling lower calorie breakfast option that’s great for meal prepping! They can also be pretty versatile because you can swap in different veggies, types of vegan cheese and add in some protein sources like the bacon bits linked above! They’re also the perfect breakfast to bring to work or school because you can just pop them in the microwave for a few seconds!

Stuff You’ll Need
- Just Egg – I used the Liquid Just Egg. It’s sold at most grocery stores now (at least in the US). You can also make a Vegan Liquid Egg pretty easily at home with the Eat Just unflavored protein powder, a few other ingredients and a shaker bottle.
- Potatoes – I used Baby Red Potatoes. If you’re using anything larger than these, it might change the calories/macros a bit.
- Peppers – I used red and green bell peppers and a sweet onion, but if you have different veggies that you like, you can use those too!
- Vegan Cheese – I used vegan cheddar shreds. Normally I use Violife, but the store we went to was out of that brand, so I used True Goodness brand instead. Any vegan shredded cheese should work fine, so pick your favorite!
- Salt – adjust to taste.

How to Make it & Pictures
- Pre-heat the oven to 350 F (177 C).
- Cut the green peppers, red peppers and onions into small dices, like the ones shown in the picture above.
- Lightly spray the muffin tin with oil. This prevents sticking and makes it easier to get out the little vegan egg bites.
- Place ten of the red baby potatoes in the muffin cups, and poke a few holes in each of the potatoes with a fork.
- Two of the muffin cups will remain empty – this is just because one container of Just Egg won’t really stretch across 12 egg bites.
- Cook for 35 – 40 minutes. You’ll know they’re done when you can easily smash the potatoes with a fork.
- Remove them from the oven, and smash the potatoes, either with a fork or the end of a rolling pin.
- You want the smashed potatoes to cover the bottom of the muffin cups (as shown below).

- Distribute the liquid Just Egg across the ten muffin cups. Try to even it out as much as you can.
- Add the diced peppers and onions to the Just Egg.
- Sprinkle the vegan cheese on top. Should look like the picture shown below.

- Cook for 18 – 23 minutes. You should be able to tell that they are fully cooked with the ole’ toothpick test.
- Stick the toothpick in the middle of the vegan egg bites and they should come out clean.
