High Protein Dirt Pudding with gummy worms and nutter butters made into small gravestones with icing that spells out R.I.P.

This spooky Dirt Pudding is tricksy because it has 26% protein! We have layers of chocolate pudding made with Extra Firm Silken Tofu and PBFit powder. There is a vanilla concoction layer that is the consistency of marshmallow fluff - this is made by combining vanilla protein powder and vegan whipped cream - I know not what to call this. Make sure to use non-gelatin gummies to keep it vegan! Fun fact - Oreos and Nutter Butters are already vegan! This recipe is perfect for Halloween; you still get to have your treats and spooky fun, but you don’t complete wreck your macros!

Ingredients

Chocolate Pudding

  • 1 package Extra Firm Silken Tofu (Mori-Nu 12.3oz package)
  • 2 tablespoons PBFit Powdered Peanut-butter
  • 2 tablespoons cocoa powder
  • 2 tablespoons soy milk can use a little more if you’re having issues blending
  • 5 grams Stevia
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla

Vanilla Goo Layer

  • 1 serving vanilla protein powder we used Orgain
  • 3/4 cups vegan whipped cream we used SO Coco Whip

Toppings

  • 2 Oreos we removed the cream filling
  • 1 Nutter Butter
  • Gummy worms we found some low-cal ones on Amazon
  • Pumpkin gummies we found ours at Target
  • Black icing for decorating cookies

Instructions
 

Chocolate Pudding

  • Blend everything together in a good blender

Vanilla Goo Layer

  • Mix together well

Assembly

  • Layer of Chocolate Pudding (about half)
  • Layer of Vanilla Goo
  • Layer the remaining Chocolate Pudding
  • Crush up Oreos and sprinkle them on top
  • Break in half your Nutter Butter cookie and decorate it like a gravestone. Put in pudding
  • Add in gummy worms and pumpkins!

It’s not very often that you get to eat chocolate, cookies, pudding and gummy worms under the guise of a high protein snack, but here we are! There’s a bit of effort that goes into this recipe, but I think it’s really fun to make around Halloween! Also if you have a kid who is picky and won’t eat anything protein related, I feel like they are not going to know there’s anything but sugar and awesome in this! I don’t have a kid for the record, and I thought this was really fun to make and eat! 🙂

Ingredients

Chocolate Pudding

  • Extra Firm Silken Tofu – make sure you use silken tofu for this. Regular tofu will not result in the same taste and texture. Silken tofu can be found in most grocery stores; you can also buy a shelf-stable option online. I like the brand Mori-Nu, and usually buy their Extra Firm Silken Tofu.
  • PBFit Powdered Peanut-butter – there are two peanut butter powder brands out there that I really like – PB2 and PBFit. I used PBFit because the macros are slightly better, but either will work great!
  • Cocoa powder – this is what will give it that chocolatey flavor! If you’re not counting calories, you could also melt chocolate and mix it in instead.
  • Soy milk – this is what I used, but any plant-based milk will work.
  • Stevia – I used stevia for this to help cut some of the calories, but if this isn’t a concern for you, feel free to use normal sugar!
  • Cinnamon
  • Salt
  • Vanilla

Vanilla Goo Layer

  • Vanilla protein powder – we used Orgain for this because I think the texture and flavor are pretty decent. Use whichever vanilla protein powder is your favorite!
  • Vegan whipped cream – we used SO Coco Whip. Any vegan whipped cream will work though!

Toppings

  • Oreos – we removed the cream filling so that it was more dirt-like.
  • Nutter Butter – these are optional but make cute little gravestones.
  • Gummy worms – we found some low-cal ones on Amazon. Make sure you pick vegan ones though – most gummy worms have gelatin in them.
  • Pumpkin gummies – we found ours at Target. Make sure you pick vegan ones though – most gummy candies have gelatin in them.
  • Black icing – for decorating cookies.

Directions

Chocolate Pudding

  • In a high-powered blender, blend everything together well until creamy and well mixed. There isn’t much liquid in this, so you may need to stop the blender a couple times and perform a spatula intervention.

Vanilla Goo Layer

  • Mix the protein powder and whipped topping together well.

Assembly

  • First is a layer of Chocolate Pudding – about 1/4 of the pudding (because this makes two servings).
  • Next is a layer of Vanilla Goo – use about 1/2 of this.
  • Layer the remaining Chocolate Pudding (about 1/4 of the total pudding).
  • Crush up the Oreos (you can use a rolling pin or a food processor) and sprinkle them on top.
  • Break the Nutter Butter cookie in half and decorate it like a gravestone. Put this in the pudding.
  • Add in gummy worms and pumpkins!
