  • Make the High Protein Ranch Dressing Recipe above; you will only be using 1/6 of the recipe for this salad
  • Make your salad with your lettuce of choice, Ranch dressing, "bacon" bits and vegan cheese of your choice. You can also put this in a Mason Jar if you're planning to meal prep

Ok, so some people might get mad because I called it “bacon” but I’m just describing the taste and am not sure what else to really call it. Either way, I think you’re really going to like this High Protein “Bacon” Ranch Salad! It’s perfect for meal prepping. I like to make a decent sized batch and put separate it out into Mason Jars to take to work for lunch. It’s a great little lunch because it has a lot of protein and fiber to keep you full, even though it’s a salad.

Ingredients

  • High Protein Vegan “Bacon” Bits – sorry that you have to click on a link for this but I didn’t want to make this recipe card super convoluted and clunky! This recipe uses TVP for the main protein source and a lot of different seasonings and flavorings to get that classic smokey taste.
    • For this one – the High Protein Vegan “Bacon” Bits recipe makes 4 servings. For the salad, you will use 2 of those servings. So half the recipe – math is fun! If you’re wanting to make enough bacon bits to match how much Ranch Dressing you’ll have, you should make 3 x the Bacon Bits Recipe. You also don’t have to do this of course, because the Ranch Dressing is useful for other things. This is mostly an fyi. You’re a grownup and can do whatever you want 🙂
  • High Protein Ranch Dressing – I might be biased but this is my favorite Vegan Ranch Dressing of all time! This recipe makes 6 servings; you will be using just 1 of those servings for this salad. So you can either make 6 salads, or have leftover Ranch Dressing to make loaded fries with, dip your favorite veggies in or just drink like a savory smoothie!
  • Lettuce/Spinach – I’m partial to spinach because it tastes good and has a crazy amount of protein per calorie, but you can really use whatever your favorite lettuce/spinach combo is.
  • Vegan Cheese – I used Follow Your Heart Feta Crumbles when I made it and thought the flavors worked awesomely together, but you can use your favorite cheese or omit it altogether!
  • (Optional) Other Veggies – feel free to mix it up and add your favorite veggies to this salad too – I think cucumbers, green peppers and carrots pair nicely with the flavors!

Instructions

  • For the “Bacon” Bits and the Ranch Dressing recipes, please follow the links above.
  • Once you have those made, you can assemble your salad. If I’m eating it right now, I like to assemble it as follows:
    • Lettuce/Spinach
    • (Optional) Other Veggies
    • Dressing
    • Vegan Cheese
    • Bacon Bits
  • If I’m meal prepping and putting it in a Mason Jar, I highly recommend assembling it in this order so stuff doesn’t get soggy and disgusting and you don’t end up regretting your life choices:
    • Bacon Bits
    • Ranch Dressing
    • Vegan Cheese
    • (Optional) Other Veggies
    • Spinach/Lettuce

***I wouldn’t keep this in the fridge for more than 3 – 4 days***
