Ingredients

  • 1/2 cup vegan mini chocolate chips
  • 1/2 cup PBFit Powdered Peanut-butter
  • 1 tbsp coconut oil
  • 2 tbsp water
  • 70 grams Edamame Protein Puffs

Instructions
 

  • In a medium glass bowl, melt chocolate chips and coconut oil in the microwave for 30 seconds. Remove from microwave and stir. Microwave again for 20 more seconds. Take out and stir. It should be fully melted by then, but if it's not repeat for another 20 seconds.
  • Stir in water and peanut butter powder. Will end up as kind of a frosting/fudge-like texture.
  • Mix in edamame puffs
  • Spread out across candy bar molds. Should make six
  • Put in the freezer or fridge for 10 minutes or so until they are set

I wasn’t quite sure what to call this recipe – is it a candy bar or is it a protein bar? I think it’s a little bit of both, but I’ll let you decide! It’s easy to make, tastes great and is packed with a surprising amount of protein for a little chocolate crunch bar. The protein in this recipe comes from edamame protein puffs and PBFit protein powder. You will probably want a silicone candy bar mold for this recipe, but it’s not a requirement.

I think this is the perfect recipe for a high protein snack or high protein dessert/treat when you’re trying to hit your protein goals but still want a sweet treat!

Ingredients

  • Vegan Chocolate – I typically use Enjoy Life Vegan mini chocolate chips because they’re easy to melt and they always have them at my local grocery store. You could really use any vegan chocolate for this recipe.
  • Coconut Oil – I’m not a chocolatier, nor do I claim to be, so I’m not much into the tempering of chocolate. I would rather just mix in coconut oil when I melt my chocolate and go on with my day. If you’re better with chocolate, you may not need coconut oil.
  • PBFit Powdered Peanut Butter – you’re definitely going to want to use Peanut Butter Powder if you’re trying to make this a high protein candy bar! PBFit is my current go-to, but PB2 has a great option as well. You can usually find one of these options at the grocery store, but you can also buy them online!
  • Edamame Protein Puffs – I have not seen these in stores yet, but you can buy them online. I have been buying SmartforLife brand on Amazon. They are a great option for adding a high protein crunch to anything you’re making, and they are pretty cheap on a cost per gram of protein basis. This is one of those ingredients that can’t really be subbed out if you’re wanting a high protein snack from this recipe.

Instructions

  • In a medium glass bowl, melt your coconut oil in the microwave for about 30 seconds. Remove from the microwave and stir. Add your chocolate and stir into the coconut oil; you want to cover the chocolate as much as you can; this helps keep the chocolate from burning.
  • Microwave for another 20 seconds. Take out of microwave, stir. Repeat in increments of 20 seconds until all chocolate is completely melted and smooth.
  • Next you will stir in the water and peanut butter powder. It will end up as a kind of fudgy/frosting-like texture. It’s not going to be shiny anymore because you just dumped in a bunch of peanut butter so don’t be sad when it’s not!
  • Mix in the edamame protein puffs.
  • Now you will take your chocolate mixture and spread out across your candy bar molds; it makes about six (depending on what size molds you use I guess). If you don’t have silicone molds, you could also shape them by hand or smooth them out into a rectangle and cut them into candy bar shapes.
  • Either way, once you’re done, throw them in the fridge or freezer for about 10 minutes until they are setup!
