Ingredients
- 1 cup Soy Milk
- 1 package Extra Firm Silken Tofu (Mori-Nu 12.3oz package)
- 2 servings Strawberry Protein Powder I used Earth Chimp
- 1 banana
- 1 cup strawberries
- 3 tbsp Edamame Protein Puffs
- 2 tbsp coconut flakes
Instructions
- In a blender, combine soy milk, protein powder, silken tofu, about 2/3 of the banana, and 3/4 cup of strawberries (leave 1/3 of the banana and 1/4 of strawberries for the toppings)
- Once smoothie mixture is well blended, divide between two bowls (this recipe is for 2 servings. Half recipe if you only want one serving).
- Top with edamame puffs, coconut flakes, and thinly sliced strawberries and bananas (1/3 banana and 1/4 cup strawberries we put to the side)

Notes
- Omit silken tofu (add some extra protein powder if you’re wanting to offset the loss of protein from the tofu).
- Use a different non-dairy milk other than soy milk – I really like Oat Milk.
- Use pea protein puffs instead of edamame puffs.
Have you tried using silken tofu in your smoothies for extra protein? If not, why? It makes your smoothies SO CREAMY and adds flavorless, easy protein. It’s kind of like using Greek Yogurt in smoothies. This, like most smoothie recipes, is kind of an inspo sort of thing. Use the fruits and veggies you like if these don’t sound interesting to you or if you just have different stuff in the fridge!
Ingredients
- Soy Milk – you’re going to see a lot of Soy Milk in my recipes. It’s my favorite non-dairy milk. If it’s not your favorite, feel free to swap it with something else. Note that soy milk has the highest protein per calorie, so using something else might change the calories/macros.
- Extra Firm Silken Tofu – I have a stockpile of Mori-Nu Extra Firm Silken Tofu, because I literally use it for everything. This brand/type is shelf stable and can be found in the grocery store, typically in the International Food Aisle. You can also buy it online. There is a refrigerated variety of silken tofu as well; it hangs out with all the other tofus at the grocery store. Honestly, any silken tofu would work great for this recipe. Make sure it’s silken tofu though, or you’ll end up with a (un)smoothie.
- Strawberry Protein Powder – I used Earth Chimp. I think it’s a limited time flavor though, so any strawberry protein powder would work fine. You could also use a different flavored protein powder if you want!
- Bananas, Strawberries – I think these fruits go great together but if you want to swap them out with something else, you do you!
- Toppings (Optional)
- Edamame Protein Puffs – I haven’t seen these in stores yet, but you can find them online – I bought mine on Amazon. If you haven’t tried these yet, YOU HAVE TO! They are little crunchy balls packed with protein and actually pretty cheap per gram of protein. There are so many ways you can use these – like in high protein “rice” crispy treats!
- Coconut Flakes – I like the texture and flavor these add to a smoothie bowl.
- I like to leave some of the strawberries and bananas to the side to use as a topping too!
- You could also just throw on whatever toppings you like; granola, nuts, seeds, etc. would also be amazing!
Instructions
- In a blender, blend up the soy milk, protein powder, silken tofu, 2/3 of the banana and 3/4 cup of the strawberries. I like to leave some of the fruit to the side to use for toppings, for *texture*. This is a thick smoothie, so make sure to put the milk in first so that it has a better chance of blending without spatula intervention.
- While the blender is going to work, chop up the bananas and strawberries you kept to the side.
- Once the smoothie mixture is well blended, divide between the two bowls (this recipe is for 2 servings). If you only want one serving, you could half this recipe. You could also just make the whole recipe and save the other smoothie for your breakfast tomorrow 🙂
- Top with edamame puffs, coconut flakes, fruits and/or any other toppings you decided on!
