Ingredients
- 2 Tortillas I use Mission Plant Protein tortillas
- 1.5 servings Vegan Shredded Cheese I use Violife Mexican Blend
- 2 tbsp Nutritional Yeast
Instructions
- In a medium-heat pan, lay down one of your tortillas. Evenly spread the shredded cheese and the nutritional yeast.
- Add the other tortilla on top. Allow to cook 2 – 3 minutes until bottom tortilla is slightly browned and cheese is starting to melt, then flip.
- Cook for another 2 – 3 minutes and serve.

Do you ever get home after a long day and feel like being an absolute piece of crap but still want to hit your protein goal? THIS High Protein Vegan Quesadilla is the recipe for those days! It’s the pinnacle of vegan junk food, but still has a surprising amount of protein because of plant protein tortillas and nutritional yeast! This is one of my favorite recipes for when I’m stressed, because it legit takes under 5 minutes to make from start to finish, and it still tastes delicious. Also, let’s be honest, kids would absolutely love this for dinner!
Ingredients
- Tortillas – the protein secret to this recipe is the Mission Plant Protein Tortillas. There are other low-carb/high protein tortillas out there, but these are my favorite! You can find these at most grocery stores. If you are going to use normal tortillas, just be aware that the calories and macros will end up different than what is listed in this High Protein Vegan Quesadilla recipe.
- Vegan Shredded Cheese – I always use Violife Mexican shredded cheese for this. It’s just my favorite of their cheeses and I think it melts really well. Feel free to sub in your favorite vegan cheese though!
- Nutritional Yeast – using nutritional yeast will make your quesadilla even more cheesy tasting and will also add in some extra protein. This is such a cool shelf-stable ingredient that you can find at most grocery stores, and you can also buy it online.

Instructions
- In a medium-heat pan, lay down one of your tortillas. As long as you’re using a non-stick pan, you shouldn’t need oil, but if you’re not using a non-stick, you may want to use some oil just to be safe.
- Evenly spread the shredded cheese on the tortilla, and then sprinkle on the nutritional yeast.
- Add the other tortilla on top.
- Allow it to cook for 2-3 minutes until the bottom tortilla is slightly browned and the cheese has started to melt. Once this has happened, flip the quesadilla.
- Cook for another 2 – 3 minutes until the other side is golden brown too. The cheese should be nice and melty at this point.

A suggestion for a recipe: if you add marinara sauce and some vegan pepperoni (or whatever toppings you like), you can make a high-protein vegan Pizza-dilla?
Also, I found that my grocery store carries the Mission Carb Control tortillas which have very similar high-protein macros to the plant power ones, and they taste more like actual flour tortillas!

I haven’t tried the Mission Carb Control tortillas before but have seen them at my store too! I’ll have to get a pack next time I go grocery shopping, because I agree, the Plant Protein ones have great macros, but the texture/flavor does seem a little off. Thank you! 🙂
I make these at least once a week! I add chopped fresh spinach and serve them with salsa. So good!!!
