Blueberry Pumpkin Crumble Muffins
Blueberry Pumpkin Crumble Muffins
Pumpkin and blueberry don’t sound like they go together, but this recipe makes me think they do! The pumpkin puree is used instead of egg and keeps the muffin so moist. But honestly, the crumble top is actually why we eat muffins.

TVP Protein Pumpkin & Craisin Muffin
TV(P)rotein Pumpkin & Craisin Muffin
While the TVP Cookies might obviously be “protein” cookies, these are just delicious on their own, and pack in a surprising 21% protein! My partner didn’t even know I had put TVP in these, and actually said they were better than the other muffin recipes on this site. The TVP works so well in these muffins – it gets nice and soft in the muffin body and a little crispy in the muffin tops! These are also pretty high in fiber! They are a great little pre-workout snack! If you want the macros to be even better, you can leave out the chocolate chips and craisins.
