Ingredients
- 175 g Edamame Protein Puffs (I used SmartforLife), this is approximately 2 1/4 cups
- 196 g Vegan Mini Marshmallows (I used Dandies)
- 2 tbsp Vegan Butter
- 3 tbsp Maple Syrup
- 2 tbsp Water
- 3 tbsp Cocoa Powder
- 2 tbsp Vegan Mini Chocolate Chips (I used Enjoy Life)
- 1 tsp Vanilla Extract
Instructions
- Melt the butter in a pot (or deep pan) on low-medium heat.
- Add in the maple syrup, water and cocoa powder. Mix until well-combined.
- Add in the mini marshmallows and stir continuously until they form a big goo collection. I use a spatula for this step. Check out the pictures in the detailed section of the post to see what this should look like.
- Drop in the vanilla extract and mix again.
- Add in the edamame puffs and chocolate chips and mix until the puffs are well-coated.
- Dump the mixture into a dish and spread out evenly.
- Allow to cool for at least 15 minutes.

Soy-free Option
- Use pea protein crisps (affiliate link) instead of edamame puffs – you can buy these on Amazon.
I’ve gotten requests to make a High Protein Chocolate Rice Crispy Treat recipe for awhile, and I finally did it, guys! These are the perfect chocolatey protein snack! They have about the same amount of protein as a store-bought protein bar, but they taste way better and you can make them at home in under 10 minutes!
If you’re not sure you want to buy a large bag of edamame puffs (affiliate link) because you don’t know what else you’d make with them, never fear! I have a ton of edamame puffs recipes!
You can make original High Protein Rice Crispy Treats, High Protein Chocolate Crunch Bars, and even High Protein Puppy Chow with them. My favorite thing to make with edamame puffs recently is actually a savory recipe. These Cheesy Protein Edamame Puffs are the best vegan cheese snack I’ve eaten (and vegan cheese snacks are my favorite so you should trust me).
Stuff You’ll Need
- Edamame Puffs – you may have also seen these called soy crispies or soy puffs outside of the US. Edamame Puffs are one of my favorite ingredients for high protein baking because they are 80% protein, have a neutral flavor and add a nice crunch! If you’re looking for these in the US, the only brand that I’m aware of is SmartforLife. You can buy them online from Amazon, and also directly from the SmartforLife website. It’s sometimes cheaper to buy directly from SmartforLife, and they often offer discounts if you buy more than one bag.
- Edamame puffs are soy-based, so if you have a soy allergy or just try to avoid soy for whatever reason, the brand Puris makes a similar product that’s pea protein-based. We’ve purchased it in the past and found that you can use them exactly like you would edamame puffs!
- Vegan Marshmallows – I always use the Dandies brand of marshmallows, but I think Trader Joe’s also sells vegan marshmallows. If you didn’t know, normal marshmallows usually aren’t vegan because they contain gelatin.

- Vegan Butter – I’ve been going with Earth Balance for my baking lately, but any vegan butter will work.
- Maple Syrup – the maple syrup adds a bit more sweetness which evens out the bitter cocoa flavor. It also gives the marshmallows a softer texture.
- Water – we’re only using a bit of water to help the marshmallows melt and mix easier.
- Cocoa Powder – where most of the chocolatey flavor is coming from!
- Vanilla Extract
- Vegan Chocolate Chips – I use the brand Enjoy Life.

How to Make it & Pictures
- First, get a large pot or deep pan and melt the butter on low-medium heat. I would recommend keeping the heat low even though it takes longer because it keeps the marshmallows from getting tough.
- Once the butter is melted, add the maple syrup, water and cocoa powder. Stir together really well.
- Add in the marshmallows. Stir regularly until everything is well mixed. I recommend using a spatula for this step. I smoosh the melting marshmallows to get the chocolate mixture distributed evenly. You should end up with a chocolatey mixture that looks like the picture below (the chocolate should be mixed in well enough that the resulting goo collection is one color).
- This is definitely the step that takes the longest time, because it takes awhile for the marshmallows to get warm enough to melt.

- Once well mixed, drop in the vanilla mixture and give it a quick stir. Add the vanilla towards the end keeps it from evaporating away.
- Dump in the edamame puffs and chocolate chips and mix together until all the puffs are evenly coated in the chocolate mixture.
- Dump the High Protein Chocolate Rice Crispy Treat mixture into a square baking dish (either 8″x8″ or 9″x9″).
- I use a glass dish and never spray it with oil, but if you’re worried about it sticking, spray some oil on the bottom and sides of your pan or line it with parchment paper.

- Allow to cool for at least 15 minutes, then cut into 9 pieces!
- For storage, you can keep them on the counter, but they should be in a sealed container so that they don’t get stale or hard!
