  • Melt butter in a pot.
  • Add maple syrup, vanilla extract, cinnamon and pumpkin spice; stir together well.
  • Add marshmallows, stir continuously until they melt and form a big goo collection.
  • Add in the edamame puffs and stir well .
  • Dump mixture in dish and spread out evenly.
  • Allow to cool for at least 15 minutes.

These High Protein Pumpkin Spice “Rice” Crispy Treats are one of my favorite things ever to make – they take only about 5 minutes, and taste straight-up like Fall! If you haven’t heard of/used edamame puffs yet, welcome! They are also called soy crispies in some countries. They can be used the same way you would use rice crispies or puffed rice. They are a little more crunchy, but because they’re soy-based, they don’t have much flavor on their own, which makes them perfect for using in desserts and high protein snacks!

They make a soy-free version called pea protein crisps, which can be used in place of edamame puffs if you have issues with soy.

If you’re not in a Fall mood (which could never be me), you should try out my recipe for original “rice” crispy treats or mint chocolate “rice” crispy treats!

Ingredients

  • Edamame Protein Puffs – this is one of my favorite high protein ingredients ever! I haven’t been able to find it in stores yet, but you can buy it online. I buy the SmartforLife 3 pound bag – you can either get it on Amazon or directly on their website.
  • Marshmallows – I always use the Dandies brand of vegan marshmallows; they are awesome!
  • Vegan Butter
  • Maple Syrup – I like to use a lighter version to keep the calories lower, but still get the flavor!
  • Vanilla Extract – trust me, bro, this is a must.
  • Cinnamon, Pumpkin Pie Spice – these are the spices that add that classic Fall taste!

Instructions

  • First, get a decently large pot and melt some butter in it. I like to keep the heat pretty low when making this.
  • Once the butter is melted, add in the maple syrup, vanilla extract, cinnamon and pumpkin pie spice. Make sure it’s well mixed.
  • Add in the marshmallows. I recommend stirring continuously to avoid burning and/or sticking. They will start to melt and form a large goo collection.
  • Once you have one massive marshmallow goo pit, add in the edamame puffs and stir well.
  • Dump the High Protein Rice Crispy mixture into a 9 inch x 9 inch dish. I use a glass dish and never need to spray it with oil or anything to keep them from sticking. But if you’re concerned about sticking, spray some oil on the bottom and sides of your pan or line with parchment paper; better safe than sorry!
  • Allow to cool for at least 15 minute, then cut into 9 even(ish) pieces and enjoy!
