These Loaded Sweet Potato Fries pack the protein while still bringing the junk food vibe! They are a bit time consuming, but totally worth it! Since we are only using one serving of the high protein sour cream and high protein cheese sauce we’re making (and they each make 6 servings), this could be a great recipe for meal prepping for the week!
What makes this meal high protein is the silken tofu we use for the cheese sauce and sour cream, and the TVP we use for the “bacon” bits! There are a couple components that need to be made for this, but honestly it’s mostly just blending stuff and waiting for TVP to cook in a pan. I used store-bought fries for this recipe because I was feeling lazy and that’s the quicker option, but you can definitely make homemade fries!
Ingredients
- High Protein Cheese Sauce – I love this sauce so much! It’s made with extra firm silken tofu, soy milk, nutritional yeast and some spices/seasonings. You definitely want to use silken tofu for this recipe or you will end up with something more similar to a ricotta cheese texture.
- High Protein Sour Cream – it might seem a bit extra to be making our own vegan sour cream, but it literally takes less than 5 minutes and has way less calories and more protein than anything store-bought. For this sour cream, we are also using silken tofu. If you don’t think you can use a full recipe’s worth of the sour cream or cheese sauce, I would recommend halving the recipes and just using half of a block of silken tofu in each.
- High Protein Vegan Bacon Bits – we will be using TVP (textured vegetable protein) to make the bacon bits for this recipe. This part is also fairly easy; we’re basically just waiting for TVP to cook. There are store-bought vegan bacon bits you could use instead but I personally like the flavor of these way better.
- Sweet Potato Fries – I used store-bought waffle fries (as you can see in the picture), but any vegan sweet potato fries will do. Or even normal potato fries really. If you’re buying store bought, check the ingredients – you’d assume all fries would be vegan but for some reason, it brings companies great joy to ruin an otherwise vegan food option by putting something stupid in it like milk powder 🙂 . You can also make your own fries in the oven or air fryer. I have this copper crisping tray I really like using for fries. They get almost as crispy as they do in the air fryer, but you can cook way more at once since you’re using the oven.
Directions
- Pre-heat the oven to whatever temperature you need.
- If you’re making your own fries, I would start cutting preparing them here. If not, move on to the next step.
- Make the bacon bits per the recipe linked in the recipe card. This will take about 20 minutes or so.
- Once you’re oven is pre-heated, bake your fires per package instructions.
- Make the cheese sauce and sour cream per the recipes linked above in the recipe card. Each of these only take about 5 minutes to make since we are just blending ingredients into a sauce.
- Assemble your loaded fries – fries, cheese sauce, bacon bits and sour cream!
- If you’re meal prepping this, I would pre-cook everything except for the fries. Since cooking the fries takes very little overhead, I would save that step for when you plan on eating them so that they’re crispy and not soggy!
