Notes
Soy-free Option
- Use pea protein crisps (affiliate link) instead of edamame puffs – you can buy these on Amazon.
I’ve gotten some requests to make a peanut butter version of my High Protein Rice Crispy Treats, and now these might be my favorite rice crispy treats recipe on the site!
These are a great option if you’re not really into store-bought protein bars. They are incredibly easy to make, take about 10 minutes and just taste like a really good rice crispy treat!
If youโre not sure you want to buy a large bag of edamame puffs (affiliate link) because you donโt know what else youโd make with them, never fear! I have a ton of edamame puffs recipes!
I also received a lot of requests for a High Protein Chocolate Rice Crispy Treat recipe, so if you haven’t checked that one out yet, you should because it’s awesome!
Stuff You’ll Need
- Edamame Puffs โ these are sometimes called soy crispies or soy puffs outside of the US. Edamame Puffs are great for high protein baking because they are 80% protein, have a neutral flavor and add a nice crunch! If youโre looking for these in the US, the only brand that Iโm aware of is SmartforLife. You can buy them online from Amazon, and also directly from the SmartforLife website. Itโs sometimes cheaper to buy directly from SmartforLife, and they often offer discounts if you buy more than one bag.
- Edamame puffs are soy-based, so if you have a soy allergy or just try to avoid soy for whatever reason, the brand Puris makes a similar product thatโs pea protein-based. Weโve purchased it in the past and found that you can use them exactly like you would edamame puffs!
- Vegan Marshmallows โ I always use the Dandies brand of marshmallows, but Trader Joeโs also sells vegan marshmallows. If you didnโt know, normal marshmallows usually arenโt vegan because they contain gelatin.

- Vegan Butter – any vegan butter should work; recently I’ve been using Earth Balance.
- Maple Syrup – the maple syrup adds a bit more sweetness and also softens up the marshmallows.
- Water – we’re only using a little bit of water for this recipe, but it helps the marshmallows melt and mix easier.
- PBFit Powder – this is just peanut powder. You can use PBFit, PB2 or even a bulk peanut butter powder (they are usually cheaper). I’m using peanut powder instead of peanut butter because it adds some protein without the added calories and fat.
- Vanilla Extract

How to Make it & Pictures
- In a large pot (or deep pan), melt the vegan butter on medium-low heat. I would recommend keeping it on medium-low heat even though it takes longer to get everything to melt, because a higher heat can cause the marshmallows to get tough once they set.
- Once the butter is melted, add the maple syrup, water and peanut powder. Stir together really well.
- Add in the marshmallows. Stir regularly until everything is melted and well-combined. I recommend using a spatula for this step. I smoosh the melting marshmallows to get the peanut powder mixture evenly distributed. You should end up with a peanut buttery mixture that looks like the picture below. The marshmallow mixture should be one solid color.

- Once well mixed, drop in the vanilla extract and stir.
- Add in the edamame puffs and mix everything together well until the puffs are evenly coated.
- Dump the High Protein Peanut Butter Rice Crispy Treats mixture into a square baking dish (I would recommend 8″x8″ or 9″x9″).
- I typically use a glass dish and don’t have issues with sticking, but if you’re worried about sticking, use a small amount of oil spray.

- Allow to cool for 15 minutes, then cut into 9 even pieces.
- For storage, you can keep them on the counter, but they should be in a sealed contained so that they don’t get stale or hard.
